Going to try to make Elderflower Champagne to day, using the River Cottage method. Anyone tried it yet and any tips....?

Apparently it makes a big difference to the flavour if you can pick the flowers early on a warm day . Their perfume reduces after that . Use newly opened flowers too , if poss .
Keep meaning to try it myself . Do let us know how you get on .

I make a couple of gallons every year, but with my own recipe. It doesn't need and shouldn't have any yeast in at all, and should only be bottled in really strong bottles like Grolsch bottles or similar, with the wired down clips tops. I lost two bottles this year; luckily it was in the correct  bottles, and they had their bottoms blwon out very neatly and tidly.Anything less, and there would have been shards of glass all over the place. OH less than impressed with his elderflower scented tools, though Embarassed  Laughing  Laughing
