hi everyone,

Would any of you know the ratio to replace sugar with honey in baking ?

we've starting extracting our honey and so far we have almost 4 pots from 1 frame .. so it looks like we'll have plenty of the stuff ...

I just replace it one on one by weight. Problem with honey is that it is more liquid, hence you might have to reduce whatever liquid goes into your dough a little.

Hi Chook,

thanks for that ... will give it a go soon enough I think ...

and we are realy pleased to have honey this year because we only got the bees in july .. so they did realy well for us ...

can I ask why you don't try again with bees ? you might be lucky this time ...

Hi Camile,
They have twice turned up on their own (but died after 2 and 1 years respectively), so I was hoping a swarm would move in again but so far hasn't. If it does not happen next summer I might go and try to find a nucleus. I love honey and I have a lot of the gear already so you are right, I should have another go.
