I am pretty sure this is wild Angelica.
I remember liking the strips of crystalised Angelica stalk which were often used to decorate cakes but I haven't seen those on sale for many years now.
I was thinking of making my own from the wild plant but read somewhere that it is not suitable .  I wonder why.
Any thoughts ?
