Is anyone on the forum registered or licensed, (I dont know the correct phrase,) to sell poultry to local butchers?

I want to get set up as a smally poultry producer, I have a local butcher really interested in some of my pasture chickens. I'm just wondering If anyone is willing to answer a few questions and give me advise.

My biggest question is around where you butcher and process the bird. I would be doing this myself and I'm just wondering for inspection purposes is a household kitchen up to standard to pass?

You need to register with the Dept of Agriculture as a producer, They will inspect your housing and you need to keep receipts for feed, they can request feed samples during a visit and will inspect your receipts and how you store the feed, vermin control etc. The chickens will have to be slaughtered in \n approved slaughter unit if they are to be sold into the food chain. Having them returned to you as oven ready will be your best option.

I'm in Co Laois, is there any kind of allowance for small producers to be able to kill and process the animals myself? Even if I was to have an approved kitchen and done a food safety course for example.

No, you have to conform to the same rules as the big processors, You will not be allowed to slaughter your own birds unless you have a registered slaughter unit. You won't even be able to keep them in a fridge in your house.
The rules are a nightmare for anyone starting off.
Selling into the food chain opens up a myriad o regulations, EHO's love frozen produce in my experience but people want fresh.
I can give you a few numbers of people who sell their own freerange poultry who can tell you exactly what you need to do, It's not impossible you just need to get a system, clearing batches of birds rather than birds here and there,
Ronan Byrne has a small poultry slaughter unit in Galway, he processes a few hundred birds a week and will hand you back your oven ready
The one in Tipperary has closed, Collins in East Cork also have a small unit.
I don't know of any other slaughter unit.
