Ingredients:
3 Medium Lemons
1lb Caster Sugar
4oz Butter
4 Beaten Eggs
Method:
1. Warm, Caster Sugar, Butter, Lemon Rind (grated), & all juices of 3 lemons for 4 mins in a microwave.
2. Mixin 4 well beaten eggs
3. Then cook in microwave for 6 mins, stiring every minute.
4. Leave to stand for 10 mins
Then put into well-washed warm jam-jars!! |

You won't get a better recipe than this one, give it a try.
5 large lemons
5 large new laid eggs
1 1/4lbs granulated sugar
8 oz good butter, cut up
Put a bowl over a pan of simmering water, and into it put the butter, sugar, lemon rind and juice; leave until the butter melts, stirring occasionally. Meanwhile, beat the eggs well. When the butter has melted, and the sugar dissolved, strain the beaten eggs through a sieve into the bowl; stir frequently, until the curd thickens to coat the back of a wooden spoon - don't let the curd mixture boil, or the eggs will curdle. Should take about 20 - 30 minutes or so. Pour into pre-warmed jars - warm jars in a low oven for ten minutes or so; use a jam funnel), then either seal immediately, or leave until completely cold until sealing. Mkaes about 4 good-sized jars.
Granulated sugar will *not* make it gritty, it should be completely dissolved before the eggs are added.
A good fund raising preserve, this, as it commands a high price due to the ingredients. I make it for the WI , and the members buy it all before ti even gets to the table
Otehr curd worth making, IMO, are spiced apple ( apple pulp with cinnamon added) and fresh peach (eat it out fo the jar with a spoon , that one!)
