hi near enniscrone i have two cows i do my own meat for the farmers market in ballina  but not leagally allowed to sell butter there

markrt is on  every saturday morning 9.30 to 2.30 no animals allowed it is food market we have local meat local  veg  (organic and regular) home cooking  preserves fish  and cheese

i have two montbelliarde x cows the eu rules as interpreted by our civil servents state that i cannot sell butter that is made in the traditional way from unpastureised milk with out crippling tests and licences. in some states in USA unpastureied milk sell at a large premium. we are currently looking into making cheese from surplus any one out there have any advice on this.

I keep a Jersey cow myself,but haven't yet got round to making cheese,i find making butter so simple i don't know why more people don't do it.
There's a link on here about making cheese i will try to find it for you.
