Hi all just wondering if anyone knows where I could learn to make goats cheese, I know the Organic Centre holds a course once a year but unfortunately Im in the middle of exams then and cant make it, but Id really love to learn this year.

I have a local friend ( name of Martina - Tubbercurry , co Sligo ) who has kept goats and been making cheese for years . She doesn't do it commercially but I am pretty sure she would be happy to share her secrets if she can make the time .  She is not on the forum but I will try to remember to call her in the near future & pass her details to you if she is happy with that . Please remind me by pm if I haven't got back to you within a couple of days .
Meanwhile you could pm Sir Porky . His OH also knows something on the subject and has made some very tasty cheeses in the past .  Wink

Do pm Sir Porky . He & OH also know Martina . Neither of them do formal classes or produce commercially due to the prohibitive costs  of meeting food safety regs but I am sure would be very happy to offer advice and/or demo for purely domestic consumption .
I have mentioned your enquiry to Sir P but haven't had a chance to speak to martina as yet .

Both Sir Porkie's Oh and Martina would be very happy to give you whatever advice you need . You almost certainly don't need to pay a lot for tuition on making goats cheese ( unless , of course , it is worth it to get a bit of time away from your own Oh ! ) . Good luck .

Perhaps you could give me a lesson on how to milk the goat in the first place . The first and last time I tried all I got was a load of midge bites , not a single drop of milk !  Laughing

just made my first batch of goat's milk yoghurt, very nice with honey and fruit, gonna try ice cream then cheese, sold the billy so mamma still has plenty of milk left, has to be milked in the morning and evening any leftover unwanted milk is fed to dogs cats pigs etc. Once the goat gets used to being fed on the milking stand its easy enough to milk her, word of wisdom... use a bucket that she can stand in! and digestives are her favourite reward Laughing
