ripening pumpkins

I have several decent sized pumpkins growing in the polytunnel but I need to clear away the foliage ( to let light get to other plants ) before the fruit is fully ripe . The skin has started to colour but is still quite soft .
Would you leave the fruit attached to the vine , even tho' the leaves have been removed , or does it make little difference at this stage ?
Leave in the tunnel , where it still gets very hot and humid , or remove to a more moderate environment ?
And does anyone know how to make pumpkin pie taste like anything other than gritty cinamon ? Laughing

Well I wouldn't remove the leave cos they still need to feed the fruit to hel ripening. And don't, like never pick the punkin before it is full ripe. I leave it on the vine until either the vine has died off or the danger of getting frosted.
