pigeon soup problem

what the hell has happened my pigeon soup? i made at about 5 am, so it would just be nice for lunch, and it was, then it came to later that night, and i mean late, about 3 am when i was peckish i went to get another bowl, before i packed it up to freeze, and it really stank, and alot of the veg had went to the top, which it never does, i took the birds out and rinsed them off, but i cant tell if it was them or the stuff had just went into the meat. The birds were not off when i started, and i tasted the meat when the soup was ready, and it was fine, very tasty in fact. i looked at the onion in it and it looked a bit funny, but it was fresh when it went in, in fact everything was extremely fresh when it was put in. i dont understand it.

does anyone have any idea what has went wrong?

I once had a very unpleasant experience which sounds similar to yours . It took me some time to figure it out but this is what I think happened .
I killed 2 small hens and left them in bags on the floor of the passenger side of the jeep while I drove home . I left them intact , in a cool place overnight . They seemed fine when I skinned and gutted them the next afternoon and I put them into the range to slow-cook at about 100 deg .  After about 8 hours in there the liquid had turned all throthy , as if it was fermenting . I think my really big mistake was during transport -- the heater was blowing directly onto them for a few minutes and this was enough to activate the bacteria in the guts . The range didn't stay hot enough to kill it .
Is there anything in common ?
