Hello Herdman.
What type of cows do you have for milking, and what is the reason you can't sell butter.
herdman

i have two montbelliarde x cows the eu rules as interpreted by our civil servents state that i cannot sell butter that is made in the traditional way from unpastureised milk with out crippling tests and licences. in some states in USA unpastureied milk sell at a large premium. we are currently looking into making cheese from surplus any one out there have any advice on this.
phil

I keep a Jersey cow myself, but haven't yet got round to making cheese,i find making butter so simple i don't know why more people don't do it.
There's a link on here about making cheese i will try to find it for you.
phil

Hope this helps

Belated welcome Herdman,

Any luck with the cheese making ?

I did a few tries last year until I ran out of rennet. you can get satisfying results.

I now found some rennet in powdered form, keeps for much longer ..

Will give it another go soon enough..

I buy in cow's milk at the moment, but I do have a couple of nanny goats that need to be got into kid. Still. Rolling Eyes  Laughing However, I think one may have turned into a maiden milker I hope, so if I can get her to stand still long enough, I'll give ita go.

Will have a look at Ascotts for the rennet, thanks. Don't tell OH I'm looking there though Shocked  Laughing

the cheese making is improving all the time temperature can make such a difference also a stable maturing room is very important in making consistant quality cheese i think  .change of topic I heard a rumour of a web site that you could bid on almost out of date food this food would be in catering sizes and generally from the food processors
