Dogfish.

I have been catching some Doggies lately. If I remember rightly they were the Rock Salmon of the UK chippies, and very nice too. So with skin that could sandpaper yer paint work. Can anyone tell me the best way to skin them?

It's good to hear that someone is catching something Very Happy . I haven't even dusted off the rods yet Crying or Very sad .
There has been extensive debate about the true identity of "Rock Salmon " on several other forums and I can tell you that the definition in Wikipedia is incorrect ( unless it has been changed since I looked at it a couple of months ago ) .
I am pretty sure it is Spurdog , not LSD ( Lesser Spotted Dogfish ) , but the latter isn't bad . Maybe a bit on the "fatty" side ?
Don't try to skin them , it is a nightmare as I am sure you already know . Boil a kettle , hold fish up by tail and just pour a bit of the hot water down it . You don't need much -- it takes about half a minute to go all round . The skin just dissolves into something with a texture like gritty toothpaste and you can easily wash it off .
Chickens love the bones ( which are only cartiledge ) and will eat everything except the teeth Wink

Thanks for that Blowin. I tried it once and you are quite right. What a nightmare. I did see someone do it on the TV. I thought he put a nail through the head and made a nic behind the head and just pulled with a pare of plyers. It looked far too easy. It might have been Hugh. The hot water method sounds much easier. Cheers.

Had another good day yesterday Smile The bag was 11 Doggies, 5 Dabs and 2 Codling. I took home 4 Doggies and prepared them as per the video clip. It worked very well. I did nail them to a board but they skinned out great. Now the recipe??? Very Happy

Nice catch , W , and apols for the delay in response to your link -- my modem got fried ( again !! ) and it took a while for our friends to get us back on line . But even with a heady 28.6 kb I can't view youtube stuff Laughing

Hi Blowin. Nice to have you back. The video link did take a while to down load at a heady 31.2 kbps but well worth the wait. Dont it drive you mad when we read all around us "Broard band now available in this area". only to find, yer, but not at my house Evil or Very Mad . I made fish cakes as per Rick Stein but got in a right mess as I made the mash too soggy. They came out fine which is more than the kitchen did Very Happy

It's about time for the perenial debate about what " Rock Salmon " really is !
I have seen threads on other forums run to pages on this Q and I even looked it up on Wikipedia . The info on there about a year ago was definitely incorrect unless American Rock Salmon is different to our own .
I think it is actually Spur Dog rather than the more common , shore caught Lesser Spotted Dogfish . That might explain why it is so difficult to produce anything as nice as the chippies used to .

Some call it Huss I think. The lesser is by far a smaller fish and once skinned it does look eel like, hence the other name of "Rock Eel". The one in the video clip was a much bigger fish but the lesser tasted great me thinks. Next week it is going to be Makerel. I hope Wink l

Thought I'd chip in here, even though its been a while since the last post.
Spurdog is definitly the rock salmon of the chippies. I'll bet that the smooth hound (like spur dog only without the spurs) ended up as rock s. as well.
When I was gill netting out of my hometown on the east coast(about 16 miles south of Dublin) we used to get loads of LSDs and I tried them a few ways.
The one I liked best was cut them into bite size pieces, flour, egg and breadcrumb them, then deep fry until dark golden. A bit of mayonaise and ketchup mixed went very well with it...
