Hello,
Here is the recipe from the tart that I baked for the putting the polytunnel up day Saturday 22nd of September !! By popular demand here it is :
300ml Double Cream
150ml milk
150gr dark chocolate, chopped
4 eggs
50gr caster sugar
1tsp vanilla essence
1tbsp plain flour
115gr toasted hazelnuts
For the pastry
150gr plain flour
Pinch of salt
3 tbsp caster sugar
50gr ground hazelnuts, toasted
90gr butter diced
1 egg, lightly beaten
To make the pastry, sift the flour, salt and sugar into a mixing bowl, then mix in the toated haszelnuts. Rub or cut in the butter until the mixture resembles fine breadcrumbs.
Make a well in the center, add the beaten egg and mix to a firm dough.
Knead the dough on a lightly floured surface for a few seconds until smooth. Wrap in clear film and chill for 30 min.
Roll out the pastry on a floured surface surface and use to line a loose bases tin. Trim the edges. Cover and chill for a further 30 min.
Put a heavy baking sheet in the oven and preheat to 200ºC. Prick the base of the pastry case with a fork. Line with foil and baking beans and bake blind for 10 min. Remove the foil and beans and bake for a further 5 min.
To make the filling, pour the cream and milk into a pan and bring to the boil. Add the chocolate and stir until melted. Whisk eggs, caster sugar, vanilla and flour together. Pour the hot chocolate cream over the egg mixture, whisking all the time. Stir in the chopped hazelnuts.
Pour the chocolate and hazelnut mix into the pastry case and bake for 25 min or until just set.
